Nyree's Welsh Cakes



  1. add flour, sugar, mixed spice, and butter to a bowl
  2. rub until crumbly
  3. add raisins / sultanas
  4. mix in egg to make a soft dough — add milk if it's a bit dry (it should look / feel like pastry dough)
  5. roll dough on a floured surface to thickness of your little finger
  6. cut out into circles
  7. grease a griddle pan / heavy bottomed frying pan and cook for about 3 mins on each side
